Ingredients
2Large eggs
1CupLight brown sugar, packed
½cupVegetable oil
1cupHoney
1teaspoonGround cinnamon
½teaspoonGround cloves
1teaspoonBaking soda
2teaspoonsBaking powder
1cupBoiling water
2 ½cupsAll purpose Flour, unbleached
½teaspoonSalt
Instructions
Preheat oven to 325 F degrees. Spray a 9x5 loaf pan with oil.
Mix the brown sugar and eggs until combined.
Add the vegetable oil and honey, and mix.
Sift in the cinnamon, ground clove, baking soda, and baking powder and mix.
Add the hot water and mix. Sift in the flour and salt, then mix.
Pour the batter into the oiled loaf pan. Bake on the center rack uncovered for up to 1 Hour and 15 minutes. To test if it is done, place a toothpick into the center and if it comes out clean, it is done. You can start testing at about an hour.
