So much flavor from tomatoes, onions, green pepper, garlic, lime, cilantro, & coconut milk. 

Then topped with hard boiled eggs for the protein.   Only takes 30 minutes to make!

Ingredients:

Cook onion, garlic, and the green pepper

Add broth, diced tomatoes, coconut milk, cornstarch slurry.

Mix in the Cumin, Cayenne pepper, salt, pepper, & lime juice.

Add Fresh cilantro, bring to a simmer and cook for 5-7 minutes.

Add the sliced hard boiled eggs to the stew
