Mix the dry brine: Salt, pepper, garlic

Pat the pork dry

Coat the pork in the dry brine mix

Wrap the pork with a plastic bag or plastoc wrap.  Store in fridge 12-24 hrs

After brining, rinse with cold water to clean off brine.

Pat dry

Season all over.  Roast for 4-5 hours for 3-4 lb roast.  Click to recipe for more.
