Coconut Shrimp Stew or Moqueca de Camarão, is a delicious traditional dish in Brazil. It's a 30-Minute creamy stew with coconut milk and vegetables. 

Perfect for Fish on Fridays!

Ingredients:

- Raw shrimp - Olive Oil - Salt, Black Pepper - Garlic, minced - Diced Onion & Green pepper - Diced Tomatoes, can - Ground Cumin - Fresh cilantro (or parsley) - cayenne pepper - Coconut Milk, unsweetened - Vegetable or Chicken broth - Lime Juice - Cornstarch & Cold Water

Clean Shrimp & season.  Dice Veggies.

Add the broth, diced tomatoes, coconut milk, cornstarch slurry, cumin, cayenne, lime juice, and cilantro. Simmer over medium-high heat for 6 to 7 minutes until slightly reduced and thickened.

Add the Shrimp back
