Most Moist Coconut Cake

This Coconut Cake is a cross between a tres leches and a coconut cake!  Moist, sweet, and full flavored.

it's a poke cake that is sooo Moist!

Ingredients:

Cake Ingredients -  Eggs, large (separate whites) -  Granulated White sugar -  Vanilla extract -  All purpose Flour, unbleached -  Baking Powder -  Coconut Milk, unsweetened  Glaze Ingredients -  Sweetened Condensed milk -  Coconut milk, unsweetened -  Shredded coconut

Whip Egg Whites to stiff peaks

Add Yolks & Sugar a little at a time alternating

Sift flour and baking powder.  Mix into batter a little at a time.

Bake 30 minutes

Make Glaze: mix sweetened condensed milk and the coconut milk.

Poke holes & Pour!!  Rest cake rest to soak. Sprinkle the cake with shredded coconut.
