Rice Bake

This recipe for Baked Rice with Cheese and Tomatoes is a simple side dish that you cannot go wrong with! It pairs well with chicken, steak, seafood or veggies.


– 4 cups Cooked Brazilian Rice with onions and garlic  – 23 ounces Whole Peeled tomatoes – 1 ½ cup Shredded Mozzarella (divided, 1 cup for rice, 1.2 cup for topping) – ½ teaspoon Salt – ½ teaspoon Ground black pepper

Prep Tomatoes


Separate the whole peeled tomatoes from the sauce. Then crush the whole tomatoes with your fingers.

Mix the rice with crushed tomatoes & Cheese



Spread out into a 9x9 or 10x10 casserole dish.

Mix Topping with reserved tomato sauce, cheese, S&P



Pour topping over the rice & Bake.
