Seasonings: Paprika, Mustard powder, Ground Coriander, Salt, Ground Black Pepper, bay leaf Chicken thighs, skinless boneless Large Onion, diced Cloves Garlic, minced Large Jalapeño, seeded and diced Diced Tomatoes, drained Lime, juiced Fresh Cilantro leaves Unsweetened coconut milk Chicken stock or broth Cornstarch + Cold Water
Cut the chicken thighs into 2 inch pieces.
Dice the onion. Mince the garlic. Deseed the jalapeño & finely dice. Chop the cilantro. Add all to the slow cooker. Add the paprika, ground mustard, ground coriander, salt, pepper, bay leaf, lime juice to slow cooker.
Mix the cornstarch with the cold water until it dissolves to make a slurry. Add to the slow cooker. Pour the broth, the drained diced tomatoes, and the coconut milk into the slow cooker. Mix to combine everything and make sure that the chicken is all submerged.
set the slow cooker on high for 6 hours or low for 8 or 10 hours. (All of these time setting will work, they just depend on your schedule.)
