This Brazilian beef short rib stew is called Vaca Atolada and it is full of flavor, tender melt-in-your-mouth beef, yucca, onions, and tomatoes. You have to try this one!

Ingredients:

Beef Short Ribs, boneless Salt, black pepper, AP white flour Extra Virgin Olive Oil Yucca root (or potato) Yellow onion, diced Garlic, minced Tomato Paste Beef Broth Diced tomatoes Red Wine Oregano dried Bay Leaf Fresh Cilantro chopped

Sear Beef

Coat beef with flour, salt, pepper, then sear on all sides.

Deglaze with wine

Scrape up the browned bits.

Add to Slow Cooker

Add all of the ingredients to the slow cooker.

Mix & Cook
