Baked Rice with Cheese & Tomatoes


This recipe for Baked Rice with Cheese and Tomatoes is a simple side dish that you cannot go wrong with! It pairs well with chicken, steak, seafood or veggies.


~ – 4 cups Cooked Brazilian Rice with onions and garlic  – 23 ounces Whole Peeled tomatoes – 1 ½ cup Shredded Mozzarella (divided, 1 cup for rice, 1.2 cup for topping) – ½ teaspoon Salt – ½ teaspoon Ground black pepper

Prep Tomatoes


Separate the whole peeled tomatoes from the sauce. Then crush the whole tomatoes with your fingers.

Mix the rice


Add the crushed tomatoes and 1 cup of the shredded cheese. Then mix the rice, tomatoes, and cheese until completely combined. 

Casserole Dish


Spread out into a 9x9 or 10x10 casserole dish.

Mix Topping


To the reserved tomato sauce, add the salt and pepper, as well as the final ½ cup of shredded cheese. Mix to combine.



Pour over the rice. Bake the rice uncovered in the oven for 20 minutes or until the top is melty and golden brown.
